Puerto Rican Care Frita

One pack of Country Style Pork Ribs

1 cup of flour

Adobo puree

2 onions, peeled and julienne

Seasoning for the flour:

Rinse and dry your country style pork ribs. Dice ribs into 3 to 4 pieces to create bite-size chunks.

Prep the Pork

Cover the meat pieces lightly with flour, salt, pepper, garlic powder, and cumin

Season the meat

Cook the pork pieces in small batches so not to crowd in the pan.

While you wait for the batches of meat to cook, begin slicing 2 onions into juienne strips

Do not over cook the meat, we just want to give it a golden crisp.

As the pork pieces batches are cooked, removed from the oil and allow to drain any excess oil.

Once the pork is all partially cooked, drain the excess oil out of the pan and begin to cook the onions

Allow the onions to pick uo and absorb the flavors left behind from the pork while caramelizing them

Once the onions are nice and soft and golden in color, add the pork, two tablespoons of adobo and cook for an additional five minutes

Put it all together

I chose to serve with pickled green bananas, but you can serve with rice and beans or plantains
